Sick of paying $16 for your smashed avo? Avocados are flooding the markets at the moment and you can grab them for less than a buck a piece. With a few other simple ingredients, you’ll be well on your way to saving for that first home! Even better, you can make this in less than 5 minutes and impress whoever is around, even if that’s just yourself.

When we run our events, we use fairly accurate recipes, but at home I like to go a bit more free-style, so the proportions are very approximate. My recommendation is to play around, taste as you go and hone your own version based on personal preference and what is on hand. I like to have my smashed avo with either fresh flatbread or spelt pancakes. ( recipes for both to follow) If you can’t be bothered with making either of these, get a decent loaf of bread, ideally with a bit of substance to it. I like a rye or spelt sourdough and it also it gives you a slow carb burn to keep you feeling satisfied and full of energy through the morning. Here we go…

1 x avocado

about a 1/4 as much feta, maybe 2 or 3 tablespoons worth

small handful of mint

squeeze of lemon or lime

If you want to get all fancy, you can start adding or substituting in other herbs such as coriander, dill or parsley. I don’t add any salt because there is plenty in the feta. You could add in some pepper or chili flakes if that’s your bent. Cherry tomatoes make a nice addition as well
